Michael Lomonaco: Executive Chef and Managing Partner
In the early 1990s Michael Lomonaco introduced The 21 Club to a menu full of bold flavors, which ultimately helped to define modern American cuisine, and in the process turned the clubby restaurant into a world-class dining destination. Later, he served as Chef/Director at Windows on the World, creating an everlasting legacy as one of NY’s most admired restaurants; he later left his imprint on the popular New York spots Noche and Guastavino’s. In addition to writing cookbooks and launching new menus at a variety of restaurants, Lomonaco hosted television shows the Food Network, Discovery Channel and the Travel Channel.
Wayne Harley Brachman: Pastry Chef
Formerly a teacher in Queens, NY, this self-taught pastry chef has worked at The Odeon, Mesa Grill, Bolo, Tapika, Pershing Square Cafe and Arizona 206. Wayne Brachman has also been a popular figure on television; his featured role on Food Network’s “Sweet Dreams” and co-host role on the “Melting Pot” introduced him to millions of cooking fans across the country.
Roger Dagorn: Wine and Beverage Director
Roger Dagorn is one of only 180 Master Sommeliers worldwide. The recipient of many prestigious awards, Dagorn was recognized by the James Beard Foundation in 1996 with the Outstanding Wine Service Award. In 1991, he was honored by Chefs in America as Best Sommelier in New York. Most recently, in 2008, he was named Sake Samurai, a prestigious honor from The Japan Sake Brewers Association. Prior to joining Porter House New York, Dagorn worked 16 years at the famed Chanterelle Restaurant. He is an Adjunct Assistant Professor on Wine Education at the New York City College of Technology, CUNY.
